“MOSTO”

The word litrelly means “must” although in this region it usually refers to the year´s newly fermented, unfiltered, white wine still with a slight sparkle. It is extremely delicate and can only be aquired at the bodega in season (October to February ).It is very traditional and very popular as an apéritif or to accompany a variety of typical dishes.
 

 
   

  VIÑA FABIA


Dry, young, white wine.
Grapes: Palomino and Pedro Jiménez
11´5% vol.
Colour: Pale
Tasting notes: Very light and fresh with fruity and floral aromas. Clean, dry palate and refreshing acidity. Perfect for seafood, fish, salads and poultry.


 
   

  FABIO MONTANO (WHITE)


Extra dry, white wine.
Grapes: Moscatel
12% vol
Colour: Pale gold
Tasting notes: An unusual, suggestive wine, bursting with exotic fruit . Rich and full on the palate, with a firm, ripe finish.To be served well chilled as an apéritif or with seafood, fish and salads.


 
   

  FABIO MONTANO (RED)


Highly defined, red wine
Grapes: Tempranillo, Shiraz, Cabernet Sauvignon, Merlot
13% vol.
Colour: Intense ruby red.
Tasting notes: A well structured wine, fruit of the full ripeness of the local vines. Light maturing in French and American oak casks.Aroma of ripe, red fruit with a touch of vanilla.Deep, rounded fullness on the palate with reminiscences of wood and correct acidity.Well-balanced ending. Good coupled with rich dishes, red meats and cheeses.


 
   

  VIÑA TARDÍA


Late harvest, naturally sweet, white wine.
Grapes: Moscatel
15% vol.
Colour: Rich gold
Tasting notes: Surprisingly different due to its deep, mature Moscatel bouquet, balanced with zesty acidity. Hints of sugared fruits, figs and apricots. Both delicate and intense at the same time. Smooth, lingering finish. To be served very well chilled and savoured at leisure , perhaps accompanying a fine “foie” or as the perfect finishing touch to a meal.
